Strawberry & lemon cake 🍓🍋💗

Ingredients:
-4g of lemon zest
-118g of granulated sugar
-42g of dark brown sugar
-2 large eggs (118g) (at room temperature)
-422g of warm milk
-110g of vegetable oil
-10g of vanilla bean paste
-410g of all purpose flour
-11g of baking powder
-1/4 teaspoon of baking soda
-2 pinches of salt
-281g of strawberries (rinsed & pat dried, stem removed + diced)
-5g of icing sugar (optional)
Steps:
Step 1. Preheat the oven at 325 degrees Fahrenheit.
Step 2. In a large bowl, add the lemon zest & sugars. Rub them together with your fingers.
Step 3. Add the eggs, milk, oil & vanilla. Whisk until combined.
Step 4. In another bowl, add the flour, baking powder, baking soda & salt. Mix well with a fork.
Step 5. Add the dry ingredients (flour mix from step 4) to the bowl with the wet ingredients and whisk until combined but don’t over mix.
Step 6. Add the diced strawberries & fold it in until combined.
Step 7. Butter a cake pan (I’m using a 9 inch one) and transfer the cake batter to it.
Step 8. Bake until a toothpick comes out clean. It took me 49 minutes.
Step 9. Let the cake rest in the pan for 5 minutes before transferring to a cooling rack.
Step 10. Once the cake is cooled, sift icing sugar on top, cut a slice & enjoy.
Notes:
-You can use orange zest if you don’t have lemons.
-The cake can be enjoyed with icing sugar sifted on top & coffee or tea or some whipped cream.
-Keep extra slices of cake in an airtight container for a day.
