This recipe is the perfect marriage of savory flavors - with herb-forward pesto and creamy whipped brie folded into the batter. You can't go wrong starting your morning with a warm batch of these rich, cheesy, and delightfully flaky scones.
Ingredients:
2 cups all-purpose flour
1 teaspoon salt
2 and 1/2 teaspoons baking powder
1/2 cup (1 stick) unsalted butter, frozen
1 cup heavy cream:
1/4 cup directly in mix
1/2 cup in whipped brie
1/4 cup to brush on scones
1 cup brie, chopped
1 large egg
1/4 cup pesto
1 tablespoon shopped herbs
optional: sea salt flakes to top
Directions:
Create the whipped brie by pulsing cheese and 1/2 cup of heavy cream in a food processor or blender. Set aside.
Mix flour, salt, baking powder, and herbs (if using) in a bowl. Grate frozen butter into the mix and combine until crumbly. Chill while mixing wet ingredients.
Whisk 1/4 cup cream, egg, and whipped brie until combined. Pour over flour mix, add pesto, and combine until dough is moist.
To make triangle scones, roll into flat circular shape and cut in half and diagonally both ways. Brush the top of each scone with the remaining heavy cream and refrigerate for at least 15 minutes.
When ready, bake at 400°F for 18-26 mins, or until tops are turning golden brown. Top with flaky sea salt and serve!
