Nonna's Pizzelles

Pizzelles are a delicately thin, crisp Italian waffle cookie that snap in the mouth with a faint sweetness—just enough to make you lose track of time and suddenly realize you've eaten fifteen without pausing. But these cookies are more than just a treat; they’re one of my most nostalgic memories. Every time I visited my Italian grandmother, she had stacks of pizzelles waiting for us. My brother and I would eat cookie after cookie as we caught up with our family.


With a pizzelle press, these cookies are incredibly easy to make. The batter comes together in minutes, and each cookie bakes to golden perfection in just about a minute and a half. I hope you enjoy these treats as much as I have over the years!



Ingredients:

  • Pizzelle press

  • 1.5 cups all-purpose flour

  • 1.5 teaspoons baking powder

  • Pinch of salt

  • 3/4 cup granulated sugar

  • 1/2 cup + 2 Tablespoons butter, melted and cooled 

  • 3 eggs

  • 2 teaspoons vanilla

  • 1/2 teaspoon almond extract 


Directions:

  • Plug in pizzelle press and allow to preheat while you prepare the batter.

  • Melt butter in a heat safe bowl and set aside to cool slightly.

  • Sift flour, baking powder, and salt together in a medium sized bowl.

  • In another bowl, mix butter, sugar, eggs, vanilla and almond extracts until fully combined.

  • Slowly add dry ingredients to the butter mixture and fold until smooth.

  • Once pizzelle maker is fully hot, spoon the batter by heaping tablespoon into each press. Close the press and allow to cook for ~1.5 minutes.

    • Notes: you might need to adjust how much batter you put in depending on the size of the press. My first few pizelles are always test runs to get the size and timing right.

  • Lift press to ensure that pizzelles are a nice golden brown. You can cook less (more chewy) or more (more crispy) depending on desired consistency.

  • Place cooked pizzelles onto a wire rack to cool and repeat until all batter is gone.

  • Enjoy, and call your grandmother!
