Milk chocolate banana muffins 🍌🤎

Ingredients:

-2 ripe bananas (207g) (mashed)

-109g of unsalted butter (melted)

-37g of granulated sugar

-66g of dark brown sugar

-121g of fine semolina

-90g of all purpose flour

-1 large egg (47g) (at room temperature)

-6g of vanilla bean paste

-3g of baking soda

-42g of milk chocolate (chopped)

-2 pinches of salt


Steps:

Step 1. Line a 12 cup muffin pan with 9 muffin papers and preheat the oven at 325 degrees Fahrenheit.

Step 2. In a large bowl, add the mashed banana, butter, sugars, egg, vanilla and salt. Whisk well.

Step 3. Add the semolina, all purpose flour & baking soda. Whisk until incorporated but don’t overmix.

Step 4. Add the chopped chocolate and fold it in.

Step 5. Add equal amounts of batter in each muffin liner by using a cookie scoop but do not overfill them.

Step 6. Bake until a toothpick comes out clean. It took me 28 minutes.



Note(s):

-You can use dark chocolate instead of milk chocolate if you prefer.

-Keep the extra muffins in an airtight container at room temperature for maximum 2 days.
