Lemon Posset

Lemon posset has become my go-to dessert for the summer, and this zesty, refreshing recipe is a true crowd-pleaser. This treat bursts with vibrant lemon flavor, complemented by its smooth, creamy texture. It's a light and cooling dessert that’s incredibly easy to make (with only 3 ingredients!) and so perfect for hot summer days.
Whether you're hosting a casual picnic or a sophisticated evening soirée, this lemon posset is the ideal sweet finish to any summer gathering. Inspired by timeless British desserts and a love for fresh, seasonal ingredients, this posset is sure to become a highlight of your summer dessert repertoire.
Ingredients:
2 cups heavy cream
3/4 cup sugar
Juice and zest of one large lemon
Optional: 4-5 additional lemons to use as a cup
Directions:
Combine the heavy cream and sugar in a saucepan. Bring to a boil over medium-high heat, stirring until the sugar dissolves.
Reduce heat to medium, and continue boiling for 3-4 minutes, stirring constantly to prevent boiling over. Remove from heat.
Stir in the fresh lemon juice and zest. Let the mixture sit for 10 minutes to cool.
Optional: if using lemon cups, begin by cutting the lemons in half length-wise. Scoop out the insides with a spoon and place aside (you can make a delicious drink with these!). You should have 8-10 empty lemon halves to pour the posset into.
Once cooled, stir the mixture, and divide it among the lemon cups or small bowls. Carefully place in the fridge and chill until set (at least one hour +).
Make sure the mixture is fully set before garnishing. Top with lemon wedges, mint leaves, or fresh flowers. Enjoy!
